Lettre de candidature

Mademoiselle An... B

Baker, chocolatier or patissier / open-ended or fixed-term contract /food beverage / Europe / France / [patissier / boulanger]

To Whom It May Concern:
I believe my passion
in creating food has always been there ever since I was little. I have also
been baking and cooking at home, for business (home-based) and
training purposes. For the past few years and until now, I have been training to hone my
skills in baking, taking further classes, and of course, try out recipes as well for business. These creations,
wherein some are sold via orders, range from local to international and simple
to complex breads, cakes, chocolates and pastries. I have made a photo portfolio
of my creations and in addition, I usually make my own ingredients since some
are either hard to find or unavailable.

Previously, I
attended several classes and short courses as well as working in restuarants here in the Philippines. I have also attended the Pilmico Bakery Training in Iligan city (my hometown). The training in Iligan was an intensive two-week course,
which consisted of both practical and technical lessons from bakery hygiene to bakery
mathematics and discussed the fundamentals of baking like the functions and
chemistry of bakery ingredients, computing for baker’s percentage and evaluating
bread and cake formulations. The classes and courses in Manila which focused on
cake decorating, pastry techniques, frostings and chocolate molding were extremely
essential and informative as well. But frankly, for me, experience is the best teacher. You learn from what you do and make and not by what you just see or read.

My short stint at the
Academy for International Culinary Arts and Tamayo’s Oceano Restaurant has
expanded my knowledge, interest and eagerness to learn more about food. In
school, we tackled tad discussions and mostly hands-on training on local and
international breads, cakes and pastries, some of which I already am conversant
with. After taking the short course, I did 112 hours of voluntary pastry staff
training. Most of what we created at Tamayo’s Restaurant were again things
which I’m very familiar with. However, I did learn important techniques in
baking which sometimes aren’t taught even in professional schools. I would’ve loved
to study more and since before, however, previous and present family
circumstances have affected my achievement in this field. Nevertheless, I’m
still aiming to learn more and in the future perhaps, earn the degree and
create and contribute not just food but works of art.

Far from what I am
focusing now, my previous job experiences were administrative, clerical,
training, management, after-sales/sales, customer service related. Nevertheless,
these experiences have taught me a lot in dealing with various circumstances,
environment and people and in discovering, developing and honing skills. It was
however, from my last work experience at Focus Global Incorporated that had won
me back my passion in baking since part of my after-sales responsibilities was
to bake and cook for clients. Bottled up and after years of searching and
trying things and working for different companies, I can honestly say without
even thinking, that this is what I'm good at, this is what I love to do and
most importantly, this is what makes me happy.

I know that with my
passion in food, my drive and my abilities, I strongly believe I can do
whatever responsibilities and tasks that awaits me. I've also always loved to travel, have a passion in learning other languages, and work, and possibly live in another country in the future. I am very eager to learn
more and I hope I can do so in your company. If given the opportunity, this
important experience will significantly contribute to my professional growth
and advancement.
